The thin biscuit is popular with cheese lovers and is named after its creator Dr William Oliver, an 18th century physician in the Georgian city of Bath, Somerset. He kept saying time and again that back in the early 70’s he was gifted a box of Huntley and Palmer’s Biscuits and were the most amazing biscuits he’d ever tasted. Dating from the mid 18th century, the biscuit takes its name from its inventor William Oliver of Bath.

Preheat the oven to 190C (fan oven 180C) and bake for 15 minutes, or until lightly golden and crisp. The aim was to make a large cheese that would take awhile to mature, thus enabling farmers to make the best use of the excess of milk produced by their herds in summer and then later either eat or sell the cheese.
